Christmas (Red and Green Chile) Style Smothered Burritos

Ingredients

  • 1 teaspoon garlic powder
  • Salt to taste

For the burritos:

  • 4 large flour tortillas
  • 2 cups cooked shredded beef, pork, or chicken
  • 1 cup cooked Mexican rice
  • 1 cup refried beans
  • 1½ cups shredded Monterey Jack or cheddar cheese, divided

For topping:

  • Sour cream
  • Diced white onion
  • Fresh cilantro
  • Lime wedges

Instructions

  1. Make the Christmas chile sauce: Heat oil in a saucepan over medium heat. Whisk in flour and cook 1 minute. Add Christmas Chile Blend and garlic powder, stir for 30 seconds. Slowly whisk in broth until smooth. Simmer 8 to 10 minutes until slightly thickened. Season with salt.
  2. Assemble the burritos: Warm tortillas. Layer each with refried beans, rice, meat, and a pinch of cheese. Roll tightly, tucking in the sides.
  3. Smother: Place burritos seam-side down in a baking dish or oven-safe skillet. Pour Christmas chile sauce generously over the top. Sprinkle with remaining cheese.
  4. Broil: Place under the broiler for 3 to 5 minutes until the cheese is melted and bubbly.
