Share
Bold, saucy, and packed with authentic New Mexico flavor — these red chile enchiladas are the real deal. Our Dos Rojos Chile Blend brings together red chile powder, jalapeño, and chipotle for a deeply spiced sauce with serious Southwest heat. This is the kind of dish that makes people ask for the recipe.
Ingredients
For the red chile sauce:
- 2 tablespoons oil or lard
- 2 tablespoons all-purpose flour
- 2 tablespoons Dam Spice Co. Dos Rojos Chile Blend
- 2 cups chicken or beef broth
- 1 teaspoon garlic powder
- Salt to taste
For the enchiladas:
- 12 corn tortillas
- 2 cups shredded cooked chicken, beef, or pork
- 2 cups shredded Monterey Jack or cheddar cheese, divided
- 1/2 white onion, finely diced
- Oil, for softening tortillas
For topping:
- Sour cream
- Sliced green onions
- Fresh cilantro
- Lime wedges
Instructions
- Make the red chile sauce: Heat oil in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Add Dos Rojos and garlic powder, stirring constantly for 30 seconds. Slowly whisk in broth until smooth. Simmer for 8 to 10 minutes until slightly thickened. Season with salt.
- Preheat oven to 375°F.
- Soften the tortillas: Quickly fry each tortilla in a little hot oil for about 10 seconds per side, just until pliable. Drain on paper towels.
- Assemble: Spread a thin layer of red chile sauce on the bottom of a 9x13 baking dish. Dip each tortilla in the sauce, fill with meat, a spoonful of onion, and a pinch of cheese. Roll tightly and place seam-side down in the dish.
- Top and bake: Pour remaining sauce over the enchiladas and sprinkle with remaining cheese. Bake uncovered for 20 to 25 minutes until bubbly and golden.
- Serve: Top with sour cream, green onions, and cilantro. Serve with Mexican rice and refried beans.
Tips
- Control the heat: Dos Rojos is spicy-hot — use 1 tablespoon for a milder sauce, 2+ for full heat.
- Make ahead: Assemble the enchiladas up to a day ahead, cover and refrigerate, then bake when ready.
- Go vegetarian: Fill with roasted sweet potato, black beans, and corn for a delicious meatless version.
