Sweet Heat Roasted Vegetables

Roasted vegetables just got a serious upgrade. A generous shake of our Sweet Heat Rub — brown sugar, chile pepper, cayenne, and black pepper — caramelizes in the oven and turns everyday veggies into a bold, sweet-spicy side dish that steals the show. Easy, versatile, and ready in under 40 minutes.

Ingredients

  • 6 cups mixed vegetables, cut into 1-inch pieces (see tips below for ideas)
  • 3 tablespoons olive oil
  • 2 teaspoons Dam Spice Co. Sweet Heat Rub (plus more to taste)
  • Salt to taste
  • Fresh lime juice, for finishing
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Preheat oven to 425°F. Line a large baking sheet with foil or parchment.
  2. Prep the vegetables: Cut everything into similar-sized pieces so they roast evenly. Pat dry — moisture is the enemy of caramelization.
  3. Season: Toss vegetables with olive oil and Sweet Heat Rub until evenly coated. Spread in a single layer on the baking sheet — don't crowd them or they'll steam instead of roast.
  4. Roast: Roast for 25 to 35 minutes, tossing once halfway through, until edges are caramelized and slightly charred.
  5. Finish: Squeeze lime juice over the top and garnish with fresh cilantro. Taste and add more Sweet Heat if you want extra kick.

Best Vegetables to Use

  • Root vegetables: Sweet potato, carrots, beets, parsnips (longer cook time — 30 to 35 min)
  • Brassicas: Broccoli, cauliflower, Brussels sprouts (25 to 30 min)
  • Squash: Zucchini, yellow squash, butternut squash (20 to 25 min)
  • Peppers & onions: Bell peppers, red onion (20 to 25 min)
  • Mix and match: Group by similar cook times for best results

Tips

  • Don't overcrowd the pan: Use two baking sheets if needed — crowded veggies steam and go soggy instead of caramelizing.
  • Sweet Heat is hot: Start with 1½ teaspoons for a milder version and add more after roasting to taste.
  • Serve as: A side dish, over rice or quinoa, tucked into tacos, or tossed with pasta.
