The Dam Good Burger

Some burgers are fine. This one is unforgettable. Ingredients

For the patties:

  • 2 lbs 80/20 ground beef
  • 2 tablespoons Dam Spice Co. Hamburger Seasoning
  • 1 tablespoon Worcestershire sauce
  • 4 slices cheese (cheddar, American, or pepper jack)

For serving:

  • 4 brioche burger buns, toasted
  • Lettuce, tomato, and red onion
  • Pickles
  • Mayonnaise, mustard, or your favorite sauce

Instructions

  1. Mix the patties: In a large bowl, combine ground beef, Hamburger Seasoning, and Worcestershire sauce. Mix gently until just combined — don't overwork the meat or it'll get tough. Divide into 4 equal portions and form into patties about ¾-inch thick. Press a shallow dimple in the center of each to prevent puffing.
  2. Season the outside: Sprinkle a little extra Hamburger Seasoning on the outside of each patty right before cooking.
  3. Cook your way:
    • Grill: Preheat to medium-high. Grill 3 to 4 minutes per side for medium, flipping once. Add cheese in the last minute.
    • Cast iron: Heat over high heat with a little oil. Cook 3 to 4 minutes per side. Add cheese, cover with a lid for 30 seconds to melt.
    • Smash style: Form loose balls instead of patties and smash flat in a screaming hot cast iron. Cook 2 to 3 minutes per side.
  4. Toast the buns: Butter and toast buns in the pan or on the grill until golden.
  5. Build and serve: Layer with your toppings and serve immediately.

Tips

  • Don't press the patty while it cooks: Pressing squeezes out the juices — let it cook undisturbed.
  • 80/20 is the move: The fat is flavor. Leaner beef makes drier burgers.
  • Also great on: Meatloaf, meatballs, steaks, grilled vegetables, and fries.
  • Level it up: Mix a teaspoon of Hamburger Seasoning into your mayo for an instant burger sauce.
