Tres Amigos Green Chile Chicken Soup

Three chiles, one incredible soup. This Green Chile Chicken Soup is built around our Tres Amigos Chile Blend — a spicy-hot combination of New Mexico Chimayó red chile, jalapeño, and green chile that gives this soup a complex, layered heat with deep Southwest soul. Hearty, warming, and wildly flavorful.
Ingredients
- 1½ lbs boneless, skinless chicken thighs or breasts
- 2 tablespoons Dam Spice Co. Tres Amigos Chile Blend, divided
- 1 tablespoon olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 cups chopped roasted green chile (fresh, frozen, or canned)
- 4 cups chicken broth
- 1 can (15 oz) white beans or hominy, drained
- 1 teaspoon cumin
- Salt to taste
- Juice of 1 lime
For topping:
- Sour cream or Mexican crema
- Shredded Monterey Jack cheese
- Fresh cilantro
- Warm flour tortillas or tortilla chips
Instructions
- Season the chicken: Coat chicken with 1 tablespoon Tres Amigos. Let sit for 15 minutes while you prep everything else.
- Sear: Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken for 3 to 4 minutes per side until golden. Remove and set aside (it doesn't need to be fully cooked yet).
- Build the base: In the same pot, sauté onion for 4 minutes until softened. Add garlic and remaining 1 tablespoon Tres Amigos, cooking for 1 minute until fragrant.
- Simmer: Add green chile, broth, beans or hominy, and cumin. Return the chicken to the pot. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes.
- Shred the chicken: Remove chicken, shred with two forks, and return to the pot. Stir in lime juice. Taste and adjust salt.
- Serve: Ladle into bowls and top with sour cream, cheese, and cilantro. Serve with warm tortillas or chips for dipping.
Tips
- Tres Amigos is spicy-hot: Start with 1 tablespoon if you prefer milder heat, and add more at the end to taste.
- Use a rotisserie chicken: Skip the searing step and stir in 2 cups of shredded rotisserie chicken at the end for a 20-minute weeknight version.
- Make it thicker: Stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water during the last 5 minutes of simmering.
- Freezes great: Store leftovers in the freezer for up to 3 months.
